Crisp and fresh iceberg lettuce wraps wrap around these delicious millet burgers, sliced tomatoes, onions, and easy-to-make homemade ketchup. The burger ingredients can easily be placed on gluten-free buns for family members who prefer more traditional recipes.
Ingredients:
1/4 cup finely chopped onion;1 clove of garlic, finely chopped;
1/4 cup finely chopped sun-dried tomatoes (without the fat and without the salt);
1 cup millet;
2 cups of medicated broth or water;
1 tsp dried Italian herbs, such as thyme , oregano and/or basil ;
1/2 tsp. paprika ;
2 tbsp. potato starch;
2 large heads of iceberg lettuce
1/4 cup ketchup;
1/2 cup tomato, thinly sliced;
1/3 cup onion, thinly sliced.
Method of preparation:
Place a small nonstick saucepan over medium-high heat. Add the onion and cook for 3 to 5 minutes until translucent. Add the garlic and sundried tomatoes and continue to cook for 1 to 2 minutes. Reduce the temperature and add the millet, medicinal broth or water, herbs and red pepper . Cover and simmer for 10-12 minutes until the millet is cooked. Set aside until completely cool.
Place the mixture in a large bowl and add the potato starch. Mash a few times with a potato masher until partially broken up and the potato starch is well distributed throughout the mixture. With wet hands, form the mixture into 4 large burgers.
Place a nonstick ceramic skillet over medium-high heat. Place the burgers and cook for 4-5 minutes on each side until browned.
Cut 8 large discs from the two heads of iceberg lettuce (4 from each head) to form the "loaves". Place the millet burger, ketchup, tomato, onion and a second iceberg salad on top of one iceberg salad disc. Repeat with remaining ingredients and serve immediately.

Advice:
When choosing between medicated broth and water, keep in mind that broth will impart a richer flavor. Store-bought stock is not recommended because it is very difficult to find a variety that does not contain oil, salt, natural flavors, and/or other additives.
