Salad of green leaves with berries

Fresh, light and fruity, this vibrant salad is a fantastic choice for a meal or breakfast any time of day. It offers you an explosion of nutrients, be it from the leafy greens, mixed berries, wild blueberries, or any other ingredient in this recipe!

Ingredients:

  • 6 p.m. loose leafy greens such as lettuce and spinach;
  • 2 tsp mix of forest fruits - strawberries, blueberries, mulberries, raspberries and/or blackberries;
  • 1 tsp diced mango (optional);
  • 1 tsp orange, peeled and cut into pieces (optional);
  • 1 tsp sliced ​​banana (optional).

Wild Blueberry Vinaigrette:

  • 1/2 tsp. wild blueberries;
  • 1/4 tsp. freshly squeezed orange juice;
  • 2 tbsp. freshly squeezed lemon juice;
  • 1 tbsp. raw honey;
  • 1 tbsp. coarsely chopped shallot (optional);
  • 1/2 tsp. Atlantic dulse flakes (optional).

Method of preparation:

Mix the green leafy vegetables and fruit in a large bowl. Mix gently and set aside.

Combine the vinaigrette ingredients in a blender and blend until smooth (1-2 minutes). Season the salad and serve. Enjoy!

Portion for 1-2 people.
