This creamy snack takes just seconds to prepare and combines exceptional flavors with comforting warmth. Sun-dried tomatoes, garlic and parsley combine perfectly with the tender artichoke core to create a bite that will keep everyone coming back for more!
Ingredients:
- 2 cups stewed artichoke cores (see Tips);
- 3/4 cup sun-dried tomatoes without the fat, soaked in hot water for 5 minutes;
- 2 tbsp. raw tahini ;
- 1 cup of chopped parsley leaves;
- 2 cloves of garlic;
- 1 lemon;
- 1/4 tsp. sea salt .
Raw vegetables of your choice to scoop out of the bite (eg red pepper, cucumber, cauliflower, radishes, asparagus, etc.).
Method of preparation:
Place the artichokes, sun-dried tomatoes , tahini , parsley, garlic cloves, lemon juice, and sea salt in a food processor. Blend the ingredients together until well combined. Serve the Sun-Dried Tomato and Artichoke Snack along with raw vegetables of your choice!
ADVICES:
- To cook the artichoke cores, follow the directions for steaming a whole artichoke. Allow the artichoke to cool and then remove all the tough green leaves until only the tender yellow leaves remain. Cut the artichoke in half and completely remove the mossy center (the silky white and purple leaves and the threads underneath) by scraping it out with a spoon. Thus, the artichoke core is ready for use.
- If you don't have raw tahini available , you can use regular tahini instead. Raw tahini has a milder taste, and roasted tahini is more expressive. Both types of tahini are fine.
- Enjoy this meal with raw vegetables as described or with cooked vegetables of any kind. If you feel like experimenting, you can even try stuffing it into baked potatoes!
