ZUCCHINI BASIL SOUP

This nice soup will become one of your favorite dishes. Zucchini adds a creamy texture and basil adds a bright flavor that makes it unique.
This recipe is part of the 3:6:9 cleanses of the Healing Medium and is included in the recipes of the book "Cleans to Heal" . Other recipes from these cleanses can be found on our blog as well as in Anthony William's books .
Ingredients:
- 1 tsp diced onion;
- 3 cloves of garlic, crushed;
- 3 medium-sized zucchini, cut into cubes;
- 2½ tsp. water or "Liver Help" broth (look for the recipe on our blog soon.);
- 1 tsp dried thyme ;
- 1 tbsp. lemon juice;
- 1½ tsp. fresh basil, plus extra for serving.
Method of preparation:
Place a large ceramic non-stick pot over medium-high heat and add the onion and garlic. Cook for 3 to 5 minutes until the onions are translucent, adding a spoonful of water if necessary.
Add the chopped courgettes and cook for another 5 minutes until the courgettes begin to soften.
Add the Liver Aid water or broth, dried thyme , and lemon juice. Reduce the heat and simmer for 10-15 minutes until the courgettes are completely soft. Transfer the soup to a blender, add the basil and blend until smooth (blend in batches if necessary). You can also use a blender.
Return the soup to the pot and reheat. Taste and taste. Ladle into bowls and serve soup garnished with fresh basil.
