These incredibly delicious date bars are very easy to make and are the perfect snack when you need an energy boost. They are a great choice for busy daily life – suitable for snacking "on the go", for children before school, or for busy days when you need something quick and filling.
You can prepare them with coconut for a richer flavor or use gluten-free rolled oats for a fat-free option. In both cases, they are incredibly tasty.
Dates are extremely beneficial for the digestive system. They are among the most powerful anti-parasitic foods – they bind to intestinal parasites, destroy them, and help remove them from the body. Additionally, they act against yeasts, mold, and other fungi, heavy metals from recent exposure, harmful bacteria, viruses, and other toxic pathogens that are not deeply rooted in the gut.
Ingredients:
2 cups tightly packed pitted Medjool dates;
1 cup dried white mulberries (other colors can also be used);
Place dates in a food processor and pulse briefly until crumbled into a soft, crumbly texture.
Add dried mulberries and shredded coconut or rolled oats. Process again until the mixture is uniform and starts to stick together. If necessary, stop and scrape down the sides of the bowl.
If using dried wild blueberries, add them last and gently mix by hand to maintain their shape.
Transfer the mixture to a square pan (20–23 cm), lined with baking paper. Press firmly and evenly with your hands or a rubber spatula.
Refrigerate for at least 2 hours to set. Then cut into bars and serve.
Serves 8 bars.
Tips:
Use shredded coconut with a single ingredient – coconut, no additives.
Use dried wild blueberries without additives – just fruit.
