Strawberry Banana Bread (Fat Free)

If you love banana bread but don't want to consume the eggs, oil, butter, gluten, and refined sugar that usually go into making it, this (fat-free) strawberry banana bread recipe is for you. You won't believe how delicious it is without the ingredients causing problems for anyone trying to heal from chronic diseases, symptoms and conditions. This delicious, sweet bread is perfect to make for family and friends.

Bananas have powerful antiviral and anti-inflammatory properties. They are also a great source of calcium and potassium.

Strawberries have hidden compounds that stop excess adrenaline from causing organ damage.

Preheat the oven to 180°C. Line a tray with baking paper and set aside.

In a large bowl, add the bananas and mash them. Add the maple syrup , coconut sugar , non-alcoholic vanilla extract or vanilla powder, and water to the bananas. Stir until well combined.

Add the gluten-free oat flour , baking powder and baking soda to the wet ingredients and mix until a homogeneous dough is obtained. Carefully fold the roughly chopped strawberries into the batter.

Transfer the dough to the paper-lined loaf pan. Arrange thinly sliced ​​strawberries for garnish (if using). Bake in the preheated oven for 45-55 minutes or until the bread is golden brown and a toothpick inserted in the center comes out clean. Allow the bread to cool before slicing.

This banana bread is best served fresh, but can be stored in an airtight container at room temperature for 1 to 2 days.
