Ingredients:
- 3 pcs. medium-sized ripe bananas;
- 1/3 tsp. pure maple syrup ;
- 1/4 tsp. coconut sugar ;
- 1 tsp alcohol-free vanilla extract or vanilla powder ;
- 1/3 tsp. water;
- 2 1/2 tsp. gluten-free oat flour ;
- 1 tsp baking powder ;
- 1/2 tsp. baking soda ;
- 3/4 tsp. fresh or frozen strawberries, roughly chopped;
- 2 fresh strawberries, thinly sliced, for garnish (optional).
Method of preparation:
Preheat the oven to 180°C. Line a tray with baking paper and set aside.
In a large bowl, add the bananas and mash them. Add the maple syrup , coconut sugar , non-alcoholic vanilla extract or vanilla powder, and water to the bananas. Stir until well combined.
Add the gluten-free oat flour , baking powder and baking soda to the wet ingredients and mix until a homogeneous dough is obtained. Carefully fold the roughly chopped strawberries into the batter.
Transfer the dough to the paper-lined loaf pan. Arrange thinly sliced strawberries for garnish (if using). Bake in the preheated oven for 45-55 minutes or until the bread is golden brown and a toothpick inserted in the center comes out clean. Allow the bread to cool before slicing.
This banana bread is best served fresh, but can be stored in an airtight container at room temperature for 1 to 2 days.
