Tomatoes are often avoided or underestimated, when in fact they have so many healing properties to offer us. This recipe becomes a masterpiece when it is prepared in the vegetable season and using the freshest and most flavorful tomatoes and produce we can find. Top with your favorite fresh herb or combination of green spices and enjoy the aroma and simple flavors of this dish.
Ingredients:
- 5-6 pcs. medium to large tomatoes;
- 3 hours cauliflower florets;
- 1 tsp freely collected leaves of fresh herbs – coriander, parsley and/or basil;
- 1 tbsp. freshly squeezed lemon juice;
- 1/2 tbsp. raw honey;
- 1/2-1 tsp. red pepper flakes;
- 1/2 tsp. garlic powder;
- 1/2 tsp. onion powder;
- 1 tsp Atlantic dulse flakes (optional).
Method of preparation:
Prepare the tomatoes by cutting about 1 cm of the disc from the top and scooping out the fleshy part. Set aside.
Make the cauliflower rice by combining the cauliflower florets, herbs, lemon juice, raw honey, red pepper flakes, garlic powder, onion powder, and Atlantic dulse flakes (if using) in a food processor. Mash a few times until you get a rice-like texture.
Stuff the tomatoes with the herb cauliflower rice, packing it in tightly. Serve immediately or refrigerate for later. Enjoy!
Advices:
- Try to choose tomatoes with the darkest red color possible. Ripe tomatoes are very aromatic and are especially suitable for this recipe. In this case, tomatoes can have a different color when they are ripe, depending on their variety.
- You can keep the fleshy part of the tomatoes to mix into a salad dressing, soup, stock or sauce, or slice it up and put it on top of the stuffed tomatoes.
