This salad can be both simple and varied, depending on your preferences. At its simplest, toss some green leafy vegetables with fresh lemon juice and voila! Especially if you serve it as a side dish - that's all you need. If you want to add other ingredients, consider tomatoes, cucumbers, onions or other vegetables of your choice to make it your own.

Ingredients:
- 4 hours freely harvested green leafy vegetables (spinach, arugula, lettuce, etc.);
- 2 tbsp. lemon or lime juice;
OPTIONAL EXTRAS
- 1/4 tsp. halved cherry tomatoes or coarsely chopped tomatoes;
- 1/2 tsp. sliced cucumber;
- 1/4 tsp. thinly sliced red cabbage;
- 1/4 tsp. thinly sliced radishes;
- 1/4 tsp. thinly sliced red onion;
- 1 tsp raw honey or pure maple syrup .
Method of preparation:
Place the green leafy vegetables in a bowl and sprinkle with the lemon juice. Stir well. Add the toppings of your choice and serve.
Portion for 1-2 people.
