This vegetarian shawarma is so delicious and filling. It is a great alternative to meat shawarma for those who wish to include more medicinal vegetables in their diet. Served alongside a zucchini and cashew sauce, paired with fresh lettuce, tomatoes, cucumbers and fresh herbs, all wrapped up in red lentil tortillas, this recipe bursts with flavor. It is also gluten, dairy and oil free.
Mushrooms contain hundreds of undiscovered phytochemical compounds, many of which are liver detoxifying. Mushrooms also reduce the number of fungi, bacteria and viruses in the intestinal tract, allowing cleaner nutrients and cleaner blood to enter the liver.
Ingredients:
- 500 g of portobello mushrooms, cleaned and cut into slices about 0.5 cm thick;
- 1 medium-sized head of red onion, cut into thin slices;
- 2 tbsp. freshly squeezed lemon juice;
- 1 tbsp. pure maple syrup ;
- 1 tsp smoked paprika ;
- 1 tsp paprika ;
- 1 ½ tsp. ground cumin ;
- 1 tsp garlic powder;
- 1/2 tsp. chili powder ;
- 1/2 tsp. sea salt (optional).
Creamy Zucchini Cashew Sauce:
- 1 cup chopped zucchini;
- 1/3 cup raw cashews;
- 1 ½ tbsp. lemon juice;
- 2 tsp onion powder;
- 1 tsp garlic powder;
- sea salt , to taste;
- 2-3 tbsp. water, if necessary for mixing;
- 1 tbsp. chopped dill or parsley.
To serve:
- 2-3 red lentil tortillas ;
- 1 cup chopped lettuce;
- 1/2 cup chopped cherry tomatoes;
- 1/2 cup chopped cucumber;
- 1/4 cup fresh herbs such as mint, parsley, or cilantro.
Method of preparation:
Preheat the oven to 200 º C. Line a large tray with baking paper.
In a large bowl, combine the mushrooms, onion, lemon juice, maple syrup , spices, and sea salt (if using). Stir until evenly mixed. Transfer to the prepared baking sheet and spread evenly. Bake for 20-25 minutes, stirring occasionally, until browned.
To make the sauce, combine all ingredients in a high-speed blender and blend until smooth. If necessary, add water so that it is not too thick.
To serve, divide the mushrooms between the tortillas and top with the lettuce, tomatoes, cucumber, fresh herbs and sauce. Serve immediately.
Portion for 2-3 people.
