This creamy and flavorful soup offers a fantastic combination of flavors in every bite. Serve it with a salad for a filling and healing meal.
Sweet potatoes are phytoestrogens and perform the vital function of ridding the body of unused, destructive, cancer-causing estrogen that interferes with the body's hormonal function.
Ingredients:
- 6-7 cups of peeled and diced sweet potatoes (about 2 kg);
- 2 1/4 tsp. hot medicated broth or water;
- 1 tbsp. chopped fresh ripe chili;
- 2 cloves of garlic;
- 1 1/2 tbsp. onion powder;
- 1 tsp paprika ;
- 1/4 to 1/2 tsp. cayenne ;
- 1/2 tsp. dried oregano ;
- 2 tbsp. freshly squeezed lime juice;
- 1 tbsp. tomato paste;
- 1/4 tsp. loosely picked chopped coriander leaves, for serving;
- 1/4 tsp. loosely picked chopped green onions, to serve.
Method of preparation:
Place the sweet potato in a steamer basket set over a pot of simmering water, cover and steam for 15-18 minutes until tender. Remove and cool for 5 minutes.
Place the steamed sweet potatoes in a high-speed blender along with the hot medicated broth or water, fresh chili pepper, garlic, onion powder, paprika , cayenne pepper , oregano , lime juice, and tomato puree. Blend until smooth for 2-3 minutes on high speed.
Ladle into soup bowls and garnish with cilantro and scallions. Serve immediately.
Advices:
- When choosing between medicated broth and water for ingredients, keep in mind that broth will impart a richer flavor. Store-bought vegetable broth is not recommended because it is very difficult to find a variety that does not contain oil, salt, natural flavors and/or other additives. For added convenience, make a batch of healing broth ahead of time and freeze it (consider pouring it into ice cubes for easy thawing) to have on hand for recipes like this one.
- Look for tomato puree that contains only tomatoes and no other ingredients, such as salt or citric acid.
