Mashed potatoes and cauliflower

Mashed potatoes are a favorite food for many people. Luckily, you can enjoy them without butter or milk, so you don't have to compromise your treatment! In this recipe, cauliflower is added to the potatoes to create a creamy and nutrient-rich puree.

Cauliflower contains the trace element boron, which is known to help the endocrine system—yet cauliflower gets more attention for its goitrogens. Cauliflower does the exact opposite of what the ads say—it helps the thyroid and the rest of the endocrine system (including the hypothalamus and adrenal glands) protect themselves from the pathogens that are really behind problems like thyroiditis.

Ingredients:

  • 4 to 5 medium potatoes, peeled and coarsely chopped*;
  • 1 small head of cauliflower, cut into large florets;
  • 2 tsp garlic powder;
  • 2 tsp onion powder;
  • 1 tbsp chopped green onions, parsley or chives, for serving;
  • 1/2 tsp red pepper , for serving.

Method of preparation:

Add 300 ml. of water to a medium saucepan, bring to the boil and add a steamer basket. Place the potatoes and cauliflower in the basket, cover and steam for 15-20 minutes until the potatoes and cauliflower are tender. Remove the potatoes and cauliflower and place in a large bowl or saucepan. Add the garlic powder and onion powder. Mash using a blender or potato masher. Serve with chopped green onions, parsley or chives and paprika .

Serving size for 2-3 people.

Tips:

*Potato skins contain many nutrients, so it is not necessary to peel the potatoes before mashing. However, if you want to achieve the look of traditional mashed potatoes, then you should peel the potatoes.
