Mashed potatoes with mushroom sauce

In this take on the traditional favorite, mashed potatoes and cauliflower are paired with a hearty mushroom sauce. This recipe is worthy of any holiday table, but is just as delicious and easy to make any day of the week.

Cauliflower is a nutrient-rich vegetable that is excellent for maintaining a strong immune system and optimal health. Ingredients:

Puree

  • 1 large head of cauliflower, cut into florets;
  • 2 potatoes, diced;
  • 2 cloves of garlic;
  • 1/2 tsp olive oil;
  • 1/4 tsp. sea ​​salt .

Method of preparation:

Steam the cauliflower, potatoes and garlic until tender, about 10-15 minutes. Drain and place in a food processor with olive oil and sea salt . Blend until smooth. Drizzle with the mushroom sauce and enjoy!

Mushroom sauce

  • 6 cups mushrooms;
  • 1 onion, diced;
  • 2 cloves of garlic;
  • 1/4 cup dried tomatoes ;
  • 1/2 tsp olive oil;
  • 1/4 cup of mashed potatoes and cauliflower;
  • 1/8 tsp or a pinch each of thyme, sage, and rosemary.

Method of preparation:

In a large pot, sauté the mushrooms, onion, garlic, sun-dried tomatoes, and herbs with 2 cups water until tender. Set aside 1 cup of the mushrooms. Place the remaining mushrooms and broth in a blender with 1/2 teaspoon olive oil and 1/4 cup of the mashed potatoes and cauliflower. Blend until smooth. Pour over the mashed potatoes and serve, garnished with the remaining diced mushrooms.

Portion for 2 people.
