Peach sorbet with ginger

This fruity iced treat can be made all year round – use either packaged frozen peaches or ones you’ve picked and frozen yourself in the summer. The sweetness of the peaches is wonderfully balanced by the warming flavor of ginger and the freshness of Meyer lemon juice. If you don’t have these lemons on hand, you can easily use regular lemon juice and adjust the amount of honey to your liking.

Peaches: The skin of this fruit has a unique ability to trap and remove harmful substances from the digestive system. It clings to old food residues, mucus and accumulations in the intestines, aiding their elimination and thus preparing the ground for good bacteria to develop. In addition, the characteristic juiciness of the peach is a combination of organic acids, mineral salts and natural sugars. This combination, combined with specific compounds around the stone, contributes to the regeneration of cells around the liver core.

Ginger: This ancient and widely used spice is known for its beneficial effects on digestion and nutrient absorption. It is often used as a natural remedy for colds, viruses, nausea, dizziness and motion sickness. It can relieve menstrual cramps, migraines, sore throats, stomach upset and fatigue, and is also useful for stomach viruses and food poisoning. Ingredients:

  • 1 thumb-sized piece of ginger, peeled;
  • 4 cups frozen chopped peaches;
  • 1 tbsp. Meyer lemon juice;
  • 1 tbsp raw honey (see Tips);
  • 1/2 cup water.

Method of preparation:

Place the ginger in a food processor and grind until fine. Then add the peaches, lemon juice, and honey. Blend the ingredients for about 2–3 minutes until the mixture is smooth.

Add water gradually, only as much as needed to keep the blades rotating. If necessary, stop the appliance and scrape the mixture from the sides to obtain a smooth texture.

The dessert will have a softer texture. For a firmer result, transfer the mixture to a suitable container and leave it in the freezer for about 3–4 hours before serving.

Tips:

  • When choosing frozen peaches from the store, check that they do not contain added citric acid.
  • If you prefer a sweeter taste, you can safely add more honey until you achieve the desired result.
