It is impressive how many different ways potatoes can be prepared – steamed, baked, in salads, pizzas, stuffed, mashed and much more. Potatoes often get a bad rap because of the other ingredients that accompany them. When prepared without butter, cream, cheese, or bacon bits, potatoes are an incredibly healing vegetable that can help lower your viral load. This pizza boat recipe is another delicious way to enjoy potatoes.

Potatoes: They are rich in amino acids that suppress the growth of viruses. Potatoes are high in glucose, which provides nutrients to the liver and keeps it strong. It also helps to build up glycogen stores, the very resource that protects us from blood sugar problems, weight gain, fatty liver and dirty blood syndrome.
Tomatoes: Use critical trace elements, phytochemicals, vitamins and minerals to support many liver functions. Lycopene is a favorite nutrient that the liver admires: the liver uses it to protect itself from cell damage, and lycopene helps the liver detoxify red blood cells safely, smoothly, and efficiently.
Zucchini: Have a mild cleansing effect on the liver, allowing it to safely expel poisonous pests. They also soothe the walls of the intestinal tract, pushing out pathogenic microorganisms such as bacteria and fungi, allowing better absorption of nutrients that can be sent to the liver.
Ingredients:
- 4 large potatoes.
FOR THE SAUCE
- 1/2 cup pure tomato puree (find one without additives);
- 1 tsp dried oregano ;
- 1/2 tsp. dried thyme ;
- 1 tsp raw honey;
- 1/4 tsp. water.
ACCESSORIES OPTIONAL
- 1/4 tsp. Zucchini, cut into cubes;
- 1/4 tsp. red pepper, cut into cubes;
- 1/4 tsp. cherry tomatoes, cut in half;
- 1/4 tsp. red onion, coarsely chopped;
- Fresh basil, to serve.
Method of preparation:
Preheat the oven to 200°C. Line a tray with baking paper.
Prick the potatoes with a fork and place them on the baking paper. Bake them in the oven for 45 minutes - 1 hour, until they are soft. Take them out and let them cool.
While the potatoes are baking, make the tomato sauce by whisking together the tomato puree, dried oregano , dried thyme , raw honey, and 1/4 cup water. Set aside.
When the potatoes are cool enough to handle, cut them in half lengthwise and hollow out the middle of each half to make a boat. Put a few tbsp. tomato sauce in each and add toppings of choice.
Place them back in the oven and bake for 15-20 minutes until the toppings are browned. Serve immediately.
Portion for 2-3 people.
