POTATO SALAD

Potato salad is an undisputed classic. Whether you eat it during a 3:6:9 cleanse or after, it's a meal that's always satisfying and comforting. The fresh herbs plus the cucumber and radishes in the potato salad give it flavor and crunch while helping to digest the potatoes. Always a winning combination.

This recipe is part of the 3:6:9 cleanses of the Healing Medium and is included in the recipes of the book "Cleansing for Health" . Other recipes from these cleanses can be found on our blog as well as in Anthony William's books .

All the ingredients in this recipe have healing properties. Let's look at two of them.

Potatoes: rich in amino acids that inhibit the growth of viruses. Potatoes are high in glucose, which boosts liver health. This glucose also helps build glycogen stores, the very resource that protects us from blood sugar problems, weight gain, fatty liver and dirty blood syndrome.

Parsley: Its phytochemicals flush out toxins from the liver. The intense green pigment in parsley contains an alkaloid specifically for liver rejuvenation; liver tissue improves when exposed to these alkaloid compounds. Parsley has a cleansing effect on gallbladder sludge.

Ingredients:

  • 2 kg. potatoes, peeled and diced;
  • 1 clove of garlic, crushed;
  • 1/4 tsp. fresh parsley, coarsely chopped;
  • 2 tbsp. green onion, finely chopped;
  • 1/2 tsp. ground mustard;
  • 2 tbsp. fresh lemon juice.

ACCESSORIES OPTIONAL

  • 1/2 tsp. radishes, thinly sliced;
  • 1/2 tsp. cucumber, thinly sliced;
  • 1/2 tsp. asparagus, steamed or raw, chopped.

Method of preparation:

Add 4-5 inches of water to a medium sized pot, bring to a boil and add a steamer basket. Place the potatoes in the basket, cover and steam for 5-10 minutes until tender. Place them in a bowl and add the garlic, parsley, scallions, mustard and lemon juice. Stir well. Add radishes, cucumber and/or asparagus as desired.

Divide into bowls and serve.

ADVICE:

  • If you don't like parsley, you can replace it with another herb you like - basil, dill or coriander.
