Potato Tacos with Black Beans

Filled with salsa, sautéed black beans and peppers and topped with fresh cilantro and green onions, these tacos are a hit! The tortillas for these tacos are made from potatoes, making them a perfect healthy substitute for regular tortillas.

Ingredients:
- For the potato tortillas:
- 2 tsp fresh potatoes, roughly chopped;
- 1/2 tsp. garlic powder;
- 1/2 tsp. onion powder;
- 1 tsp pure maple syrup .
Filling:
- 1/2 tsp. boiled black beans;
- 1/2 tsp. garlic powder;
- 1/2 tsp. onion powder;
- 1/4 tsp. chipotle powder;
- 1 tbsp tomato puree;
- 1 tsp freshly squeezed lime juice;
- 1 tsp red, yellow, or orange peppers, thinly sliced;
- 2-3 tbsp. fresh coriander leaves, for serving;
- 1-2 tbsp. chopped green onions, to serve.
Salsa:
- 1 tsp diced tomato;
- 1/4 tsp. red, yellow or white onion, finely chopped;
- 1/4 tsp. loosely picked coriander leaves, finely chopped;
- 1 tbsp freshly squeezed lime juice;
- 1/2 clove of garlic, finely chopped;
- 1 tsp finely chopped ripe chili of your choice;
- 1/2 tsp. ground cumin (optional).
Method of preparation:
Preheat the oven to 200°C.
To prepare the tortillas, add 3 inches of water to a medium saucepan, place a steamer basket, add the potatoes and cover. After the water boils, steam the potatoes for 20-25 minutes until tender. Remove the potatoes and place them in a food processor along with the garlic powder, onion powder, and maple syrup . Mash them until you get a smooth mixture.
Line a baking sheet with parchment paper. Spoon the potato mixture into 3 or 4 balls. Flatten each ball with a wet spatula to make 3 or 4 mini tortillas. Bake in the oven for 15 to 20 minutes until lightly browned. Turn the parchment paper over onto a cutting board and carefully peel it off. Set the tortillas aside.
Add the cooked black beans, garlic powder, onion powder, chipotle powder, tomato paste, and lime juice to a small saucepan. Cook over medium-low heat for 3 to 5 minutes, until the beans are tender. Add a little water if the mixture sticks to the pot.
To make the salsa, combine all the ingredients in a small bowl and mix well.
Fill the soft potato tortillas with the peppers, black beans, salsa, cilantro and green onions. Serve immediately.
Advices:
Look for tomato puree that contains only tomatoes and no other ingredients, such as salt or citric acid.
