Guacamole with pomegranate

Pomegranate is a superfood that can be added to any recipe to add more nutrients and flavor. The pomegranate seeds give a fun and surprising burst of sweet juiciness when you chew on them. They pair beautifully with the flavor and creaminess of guacamole.

Pomegranate is a great blood booster, as it boosts your red and white blood cell count. It also plays an important role in blood sugar, replenishing valuable glucose reserves in the liver so that the liver can release that glucose into the bloodstream when needed. This process in turn protects the adrenal glands – because if you don’t eat for a few hours and your liver has no glucose reserves, then the adrenal glands are forced to pump hormones like cortisol into your bloodstream to keep you active, leading to adrenal overactivity and ultimately exhaustion. So if you’re looking to balance your adrenal glands and stabilize your blood sugar, turn to pomegranates. The high-quality glucose in pomegranates also makes them brain food, aiding in concentration and focus.

Ingredients:

  • 2/3 avocado;
  • 1 clove of garlic, crushed;
  • 2 tablespoons finely chopped red or white onion;
  • 1/4 tsp fresh coriander, finely chopped;
  • 1-2 tsp fresh finely chopped jalapeno (optional);
  • Juice of 1/2 lime;
  • 1/4 tsp pomegranate seeds, plus extra for serving;
  • Sea salt , to taste (optional).

Method of preparation:

Place the pitted and peeled avocados in a medium bowl. Mash with a potato masher or fork until the guacamole is smooth but still has some larger pieces visible.

Add all remaining ingredients and mix gently with a spoon. Taste and adjust seasoning. Sprinkle with pomegranate seeds. Serve immediately or refrigerate.
