These delicious millet tortillas are gluten-free and corn-free, making them the perfect vehicle for an endless variety of mouth-watering side dishes. Ingredients:
- 2 cups water;
- 2 tsp millet flour;
- 1 head of garlic, finely crushed or 1/2 tablespoon garlic powder;
- 1/4 tsp sea salt (optional).
Method of preparation:
Combine the millet flour and 2 cups water in a shallow saucepan and bring to a boil. Do not stir. Let the water continue to simmer over low heat for 2 minutes. Then add the garlic and sea salt (if using). Remove from heat and stir until combined. The resulting dough will feel dry to the touch. Transfer the dough to a bowl and set aside until cool enough to touch.
Shape the dough into small balls about 5cm in diameter. Place one ball between two sheets of cling film and roll it out into a flat crust. Using a small round bowl or glass as a template, cut an even circle of dough around the outside of the bowl. Set the circle aside and repeat with the remaining dough.
Place a large nonstick ceramic skillet over medium-high heat. Place the tortillas tightly, but not overlapping, in the skillet. Turn every two minutes until golden brown and speckled on both sides. Continue until all the tortillas are cooked.
Serving size for 10-12 tortillas.
