Mango Nori Wraps

Sweet, juicy mango and fresh herbs make these nori rolls exceptional. They are simple but packed with flavors, especially when you can find fresh mangoes and tomatoes. Roll up the nori rolls and serve immediately or pack them in a box to eat during the day.

The highly bioavailable magnesium in mangoes, combined with phytochemical phenolic acids, calms the central nervous system, which helps prevent strokes, seizures and heart attacks.

Ingredients:

  • 4 pcs. nori leaves;
  • Squeeze orange, lemon or lime juice;
  • 1 mango, peeled and cut into thin strips;
  • 1 julienned cucumber;
  • 2 tomatoes, cut into strips;
  • 4 sprigs of fresh onion;
  • 1 tsp loosely harvested microgreens or sprouts;
  • 1 tsp loosely picked fresh coriander leaves;
  • 1 tsp loosely picked fresh mint leaves;

Method of preparation:

Place a sheet of nori, shiny side down, on a cutting board with the wide end toward you. Squeeze just a few drops of orange, lemon or lime juice onto a nori sheet and use your fingers to spread the juice all over the sheet so that it is slightly moistened.

Arrange 1/4 of the mango slices, cucumber, tomatoes, spring onions, micro greens or sprouts, and herbs at one end of the sheet. Squeeze another drop or two of orange, lemon or lime juice on the other end of the leaf and then roll it up tightly. Cut the roll in half.

Repeat with remaining ingredients and serve.

Portion for 1-2 people.
