Red cabbage helps the liver in many ways. Its greatest role is associated with the intestinal tract, where it minimizes pathogenic microorganisms, expels ammonia gas from the body, destroys fungi and bacteria, and clears out old debris and rotten food, creating a better environment for the ileum to be able to produces vitamin B12 . Red cabbage is the liver's secret weapon because all these benefits for the intestinal tract are good for the liver as well. Just when you think red cabbage's duties are done, its sulfur compounds combined with the deep purple-red pigment make their way to the liver, where they revitalize and regenerate damaged tissue, including the tissue in the deep, inner core of the liver, which makes red cabbage an effective means of restoring this vital organ.
Ingredients:
Tacos:
- 1 small head of red cabbage, torn into leaves;
- 1-2 medium-sized tomatoes, cut into cubes;
- 1/4 cup red onion, diced;
- 1/2 avocado, thinly sliced (optional; if you don't want your recipe to contain fat, it can be left out);
- 1 red bell pepper, cut into thin slices;
- 1/4 cup fresh cilantro, for serving.
Mango Ginger Sauce:
- 1 cup diced mango;
- 2 tbsp lime juice;
- 1 cm piece of fresh ginger;
- 1/4-1/2 tsp. cayenne or red pepper flakes ;
- 2 Medul variety dates;
- 3 tbsp. water.
Method of preparation:
Arrange the cabbage leaves on taco-shaped plates and fill them with diced tomatoes, red onion, avocado (if using), red pepper and cilantro. Set aside.
Prepare the sauce by combining the mango, lime juice, ginger, cayenne or red pepper flakes , dates and water in a blender. Blend until a smooth homogeneous mixture is obtained.
Spoon the sauce over the red cabbage tacos. Serve immediately.
