This cherry pie is really rich in flavor, thanks to the dark red cherries, which makes it so special. Made without gluten, refined sugar, dairy, bad fats, or other common unhealthy pie ingredients, this recipe is one you can indulge in with gusto.

Ingredients:
For swamps:
- 1/4 tsp ground flaxseed ;
- 1/2 cup applesauce ;
- 2/3 tsp. coconut sugar ;
- 1/2 cup melted coconut oil ;
- 2 cups gluten-free oat flour ;
- 2/3 cup brown rice flour;
- 1/4 cup tapioca starch .
Filling:
- 7 cups fresh or frozen pitted cherries;
- 1/3 tsp + 2 tbsp maple syrup ;
- 1/3 cup + 1 tablespoon arrowroot starch or tapioca starch ;
- 1 tbsp vanilla extract.
To serve:
- 1/3 cup coconut whipped cream (optional).
Method of preparation:
To make the marshmallows, combine the ground flaxseed , applesauce , coconut sugar , and coconut oil in a bowl. Whisk until smooth.
In another bowl, whisk together the oat flour , brown rice flour, and tapioca starch .
Add the liquid ingredients to the dry ingredients and mix until you get a smooth, soft dough. Leave in the refrigerator for 30 minutes.
Preheat the oven to 180°C.
Roll out the dough between two sheets of baking paper, then transfer it to a pie pan. Press the dough evenly against the bottom and sides of the pan with your hands. You can use a glass to level the bottom. Prick the dough several times with a fork. Refrigerate.
To make the filling, combine the cherries, maple syrup , arrowroot, and vanilla in a large saucepan. Increase the heat to medium-high and cook, stirring frequently, until very thick.
Transfer the filling to the prepared crust and bake for 25-30 minutes, until the crust is golden brown. Cool the pie thoroughly before serving, then serve with a dollop of whipped cream (if using).
